Pineapple Pork with Chicken Bacon?
I don't think I've seen those pork chops (I've purchased thin slice boneless chops), and I know I've never seen chicken bacon. I buy turkey bacon, but I bet chicken bacon has a little more flavor. What you're suggesting sounds kind of good actually. Roll it up with the bacon on the outside and maybe secure with a toothpick. I'd put that; on the grill! I'm not sure how the toothpick would hold up though. Maybe soak some short wooden skewers for a few hours and use those to secure them with if putting on the grill. Bet it would be delicious, and doesn't need much seasoning. I'd probably season the inside of the pork chop with some s&p and maybe some garlic powder.
